Vegan Mediterranean Bowl with Sun-dried Tomato Pesto is an easy, nutrition-packed dinner. A must-have for Summer dinner parties!
Serving Size 2 bowls
Ingredients
- 1/2 cup couscous dried
- 4 tbsp sun dried tomato pesto
- 1 cup cherry tomatoes halved
- 1 cup cucumber sliced
- 1 cup artichoke hearts quartered
- 1/2 cup kalamata olives
- 2 tsp lemon juice fresh
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper ground
- 2 tsp basil leaves dried or fresh
- 1/2 tsp oregano dried
Instructions
- Add 1 1/2 times boiling hot water to the couscous, cover and let it soak up the water for 20 minutes.
- Chop the veggies, add the olive oil, salt, pepper and spices, then combine well.
- Place all ingredients on a plate/in a bowl.
- Squirt lemon juice on top, sprinkle some basil and enjoy!
