Vegan Mediterranean Bowl with Sun-dried Tomato Pesto is an easy, nutrition-packed dinner. A must-have for Summer dinner parties!

Servings: 2 bowls
Ingredients
  • 1/2 cup couscous dried
  • 4 tbsp sun dried tomato pesto
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber sliced
  • 1 cup artichoke hearts quartered
  • 1/2 cup kalamata olives
  • 2 tsp lemon juice fresh
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper ground
  • 2 tsp basil leaves dried or fresh
  • 1/2 tsp oregano dried
Instructions
  1. Add 1 1/2 times boiling hot water to the couscous, cover and let it soak up the water for 20 minutes.

  2. Chop the veggies, add the olive oil, salt, pepper and spices, then combine well.

  3. Place all ingredients on a plate/in a bowl.

  4. Squirt lemon juice on top, sprinkle some basil and enjoy!
