Vegan Blueberry Oatmeal Pancakes

Ingredients

In this pancake, the banana gives the sweetness and the softness of it all. If you don’t like banana, I recommend you look for another recipe, because you can definitely taste it. The blueberries give such a nice tartness and also a lot of antioxidants. 🙂

The baking soda is sort of a must if you want your pancakes to be fluffy, but you can leave it out no problem. My second favorite part is, that you don’t have to use oil. If you use a non-stick pan, that problem is sorted. 🙂

  • 1 cup oats (I used a gluten-free version)
  • 1 overripe banana
  • 1/2 cup fresh blueberries
  • 1/2 tsp baking soda
  • 1 cup water
  • Optional: maple/agave/date syrup

How to Make

STEP 1:
Put the oats, banana, water and baking soda into a blender.

STEP 2:
Blend until smooth.

STEP 3:
Wait 3-4 minutes for the batter to “harden” a bit.

STEP 4:
Pour a little amount into a frying pan, place 3-4 blueberries on it and let cook for 45 seconds.

STEP 5:
Flip and repeat.

STEP 6:
Top with fresh blueberries and an optional sweetener.

Ingredients
 

  • 1 cup rolled oats
  • 1 tsp baking powder
  • 1 medium very ripe banana
  • 1 cup oat milk
  • ½ cup fresh blueberries (plus optional extra for topping)

Instructions
 

  • Add the oats, banana, water and baking powder into a blender. Blend until smooth.
  • Wait 10 minutes for the batter to thicken a bit.
  • Pour a little amount into a frying pan, place 3-4 blueberries on it and cook for 2 minutes until golden brown. Gently flip and cook for 1-2 more minutes.
  • Transfer the cooked pancakes to a plate.
  • Repeat with the remaining batter.
  • Top with more fresh blueberries and an optional sweetener.
