  • apple
  • almond milk
  • flax seeds
  • lukewarm water
  • neutral oil
  • baking powder
  • maple syrup
  • ground cinnamon

How to Make

STEP 1:
Combine the dry ingredients. Add oat flour, baking powder, ground cinnamon and salt to a medium bowl. Stir well.

STEP 2:
Combine the wet ingredients. Add almond milk, lemon juice, maple syrup, oil and vanilla extract (optional) to another bowl or measuring cup. Stir well.

STEP 3:
Combine the dry and wet ingredients and very gently stir until JUST combined. (I usually stir less, than 10 times and I always use a whisk.)

STEP 4:
Let the pancake batter rest for about 10 minutes. The oats will soak up the liquid, and the batter will thicken. (This is a crucial step, if you want decent, fluffy pancakes.)

STEP 5:
After letting the pancake batter rest, gently fold in the grated apples.

STEP 6:
Lightly grease a non-stick pan and heat over low-medium heat.

STEP 7:
Once the pan is hot, add 2 tablespoons of the pancake batter to the pan and cook until bubbles form on top and around the edges. Flip and cook on the other side as well until golden brown, then transfer to a plate.

STEP 8:
Repeat with the remaining batter.

STEP 9:
(Optional) Top with maple syrup, chopped apples, any nut butter and/or vegan salted caramel.

Oat flour: If you only have rolled oats at home, jut pop them in a blender and blend until you get a fine, flour-like texture.
Almond milk: Almond flavor goes especially well with apples, but any type of non-dairy milk will work.

What spices other, than cinnamon can I use in this recipe?

Ground nutmeg, pumpkin spice, allspice and gingerbread spice are all wonderful additions.

Can I use rolled or quick oats instead of oat flour!

Absolutely. Oat flour is just blended oats afterall. If you are using regular oats, you will need 2 ¼ cups.

  • 1 cup oat flour (*see notes)
  • 1 tsp baking powder
  • ¼ tsp ground cinnamon
  • tsp salt

Wet Ingredients

  • ¾ cup almond milk (or any non-dairy milk)
  • 1 tbsp lemon juice
  • 2 tsp maple syrup
  • 2 tsp neutral oil (plus extra for greasing the pan)
  • ½ tsp vanilla extract (optional)

    Until now I always made “regular” pancakes but this one looked so appetizing I had to give it a go and it did not disappoint! I put some salted caramel on mine and just ate it all in one go.
