What can replace eggs in pancakes?

Eggs function as binders in pancakes, so you’ll want to find non-egg substitutes that can do the same thing. Smashed bananas or applesauce make a tasty alternative. They’ll keep your pancakes together and add a bit of extra flavor, too. Chia seeds soaked in water in a one-to-three ratio of chia seeds versus water. Egg substitutes from the store also work.

Why are my vegan pancakes gooey?

We know of a couple of possible causes. The first may be that they’ve not been cooked long enough, so the gooey consistency comes from there still being raw dough inside. You might also not be cooking them at a high enough temperature. Finally, you may have overmixed them, causing the gluten inside to get “glommy.” When you’re mixing the batter, less is more. Mix it just enough to get everything thoroughly mixed and then start cooking.

Is regular pancake mix vegan?

The short answer is it depends. Many instant pancake mixes come with egg and milk already in them to make it easier to cook them straight out of the box. Other pancake mix manufacturers put out vegan-specific pancake mix. The key is to read the label if you’re not sure.
