How to Make

STEP 1:
Start by making the flax eggs. In a very small bowl or cup, combine the ground flaxseeds and lukewarm water. Let it sit for 5 minutes before adding to the rest of the ingredients.

STEP 2:
Add the oat flour, soy milk, mashed bananas, vegetable oil, flax egg and salt to a blender and blend for about 10 seconds (until just combined). Add the baking powder and blend for another 10 seconds.

STEP 3:
Let the pancake batter sit and thicken for about 5-10 minutes.

STEP 4:
Meanwhile, lightly grease a non-stick pan with cooking spray and heat over medium-low heat.

STEP 5:
Once the pan is hot, add 2 tablespoons of the pancake batter to the pan and cook until bubbles form on top and around the edges (3 at a time). Flip and cook on the other side for 1-2 minutes or until golden, then transfer to a plate.

STEP 6:
Repeat with the remaining batter.

STEP 7:
Top with maple syrup, fresh berries and/or banana slices.
