This vegan Piña Colada Smoothie is made with pineapples and coconut. Perfect for a healthy breakfast drink or a non-alcoholic “cocktail”! A tasty way to sneak some holiday feel in your weekdays.
Sometimes, you just need a Pina Colada on a cold, Monday morning. Obviously, without the alcohol. And in a healthy version. Luckily, a healthy pineapple-coconut smoothie is the easiest thing to do.
You will need: frozen pineapple chunks (unsweetened, please!), fresh pineapple juice, shredded coconut, coconut yogurt or cream (whichever you have at home or prefer) and a ripe banana.
You will also need a blender, some smoothie glasses and paper straws (for the fun of it).
If you are brave or want to go all out, you can put some rum extract (imitation rum) in your smoothie as well. It will make it taste like the real deal, but you won’t actually get drunk. 🙂
Now off to count the days ’til Summer arrives…
P.S.: You can use fresh pineapple chunks as well, but you will have to put your drink in the fridge after blending, as it will be warm. (That’s one of the reasons why I prefer frozen fruits for smoothies.)

Healthy Pina Colada Smoothie
Ingredients
- 3 cup pineapple chunks frozen
- 3/4 cup pineapple juice fresh
- 4 tsp coconut yogurt or cream
- 1 medium banana ripe
- 6 tsp shredded coconut
- 1/2 tsp rum extract optional
Instructions
- Put all ingredients in a blender.
- Blend for 2 minutes or until smooth and creamy.
- Garnish with a pineapple chunk and paper straws. Enjoy!
