  • Pasta
  • Canned tomatoes
  • Water
  • Olive oil
  • Garlic
  • Red onion
  • Olives
  • Sun-dried tomatoes
  • Nutritional yeast
  • Dried and fresh basil
  • Salt and pepper 

How to Make this Vegan One Pot Pasta Recipe

Step 1: 

Add all of the ingredients to a large, heavy-bottomed pot over high heat. Cover the pot with a lid and heat to a boil. 

Step 2: 

Once the water begins to boil, reduce the heat to low and simmer until the pasta is al dente, stirring occasionally to prevent the pasta from sticking to the bottom of the pot. Serve warm and enjoy.

  • 10 oz penne pasta (283 g)
  • 1 cup canned pureed tomatoes
  • 2 cups water
  • 2 tbsp olive oil
  • 1 garlic clove finely minced
  • medium red onion finely sliced
  • 30 green, black, or kalamata olives
  • 4 sun-dried tomatoes sliced (25 g)
  • 2 tbsp nutritional yeast
  • 2 tsp dried basil
  • ½ cup fresh basil finely chopped
  • ½ tsp ground black pepper
  • 1 tsp salt
