Ingredients for Vegan Mashed Potatoes
- Yellow potatoes
- Oat milk
- Olive oil
- Nutritional yeast
- Salt and pepper
How to Make Vegan Mashed Potatoes
Step 1:
Wash, peel and cut the potatoes into cubes, then add to a large pot and fill with cold water.
Step 2:
Bring to a boil, then reduce the heat to medium-low and simmer, uncovered, for 25-30 minutes until the potatoes are VERY soft.
Step 3:
Drain the potatoes and transfer them to a medium bowl. Use a potato masher or the back of a fork to mash the potatoes to your desired consistency.
Step 4:
Add the olive oil, oat milk, nutritional yeast, salt and ground black pepper to the bowl. Stir with a wooden spoon until well combined and smooth. Taste and adjust the seasoning, adding more as needed.
Step 5:
Serve the mashed potatoes right away or store in the fridge for up to 3-4 days.
