Are you at home, self-isolating? If you don’t want to spend all your life savings on food deliveries, but rather use up the cheap and easy ingredients in your cupboard, you’ll love these 9 recipes! The best thing is that all of them are healthy, so you won’t gain useless weight while quarantining.
1. Oat Pancakes with Bananas (gluten-free)
These vegan oat flour pancakes are a go-to in my house. They are healthy, cheap, easy and quick to make. The best type of recipe.
2. Oat Pancakes with Apples (gluten-free)
Guess what? Apples are even better in pancakes, than bananas. They last longer, have less carbs and generally cheaper, than bananas as well. Just make sure to choose a sweet variety (I used Red Delicious).
3. Blueberry Oatmeal (gluten-free)
It’s time to use those frozen blueberries you’ve had lying around in your freezer for months! This high-protein vegan breakfast recipe is sweet, tart, crunchy and soft at the same time.
4. Scrambled Tofu (gluten-free)
High-protein, plant-based, clean eating and SUPER delicious. Goodbye eggs, hello tofu!
5. Lentil “Tuna” Spread (gluten-free)
It’s crazy how much this lentil spread satisfies those tuna cravings. Seriously. Give it a try. I promise you won’t be disappointed. It’s cheaper too and has a lot of protein.
6. Smoky Lentil Soup (gluten-free)
A second lentil recipe, because I just LOVE lentil. Much more, than beans actually. This warming and hearty lentil soup with potatoes will last a long time and serves a huge family.
Recipes don’t get easier than this. You need tortilla wraps, hummus, BEANS and some of your favorite veggies. Easy, cheap, QUICK and satisfying. If you have some potato chips to go with it, even better.
8. Mexican Rice Salad (gluten-free)
I bet you haven’t thought of using rice in a salad format, did you? Well, you should have because they totally go in salads. Especially this Mexican flavored one with beans, corns and bell peppers. Perfect to use up all those canned goods on your shelves.
9. PB&Jam Banana Sandwich (gluten-free)
A healthy twist on the classic PB&J sandwich. You can eat it for breakfast or even as a treat. VERY popular with kids in my family. 😉
