This Vegan Lentil “Tuna” Salad Sandwich is a super easy lunch that’s high in protein and rich in flavours. Beginner-friendly!
How should I even start describing how much I love this sandwich? I will start somewhere.
First of all. No one told me, you can just just make creamy lentils! Sure, I love lentil soup and lentil stew, but I only recently found out that lentil is great any way you make it.
Now, I’m not an expert on creating “vegan seafood”, but I would say, that out of everything I’ve ever eaten, this lentil cream “thing” comes pretty close to tuna-like taste and consistency.
And it is so good in a sandwich, you guys! I made toasted bread, then packed it full of cucumbers and spinach and just, ugh. You have to make this in a batch though, because no way you won’t want to eat it for a week straight, at least.
Forget bland school/work lunches, this sandwich takes it to another level. And I haven’t even tried putting other things into the sandwich. I bet there are more ingredients that would make it even better.
Vegan Lentil “Tuna” Salad Sandwich
But anyways. It’s really easy to make this lentil cream. I used cooked lentils (canned), because I ain’t about cooking them (I really don’t have the patience for soaking and cooking beans and lentils).
First of all, chop the onion and garlic, then caramelize them on 2 tablespoons of oil (medium heat). After they become light brown, add the lentils and the spices (mustard comes at the very end).
I would say 1-2 minutes of stirring or less is perfectly enough. When you’re done, add the mustard and stir again until well combined. Now, toast the bread, layer the veggies and add the “tuna” salad. Garnish with a pickle, if you are fancy like me. 😉

Salt and pepper amounts are really hard to tell usually. That’s because everyone has a differet taste and tolerance. For example, I like my food very salty and peppery. Just really strong flavors, in general.
But you could be the complete opposite of me, so please taste the lentils while cooking to make sure they’re perfect. If you find the “cream” too dry, add a little bit of more oil.

- 1 cup lentils cooked
- 1/2 head yellow onion finely chopped
- 1 clove garlic grated
- 2 tsp mustard
- 2 tbsp oil
- 1/2 tsp salt
- 1/2 tsp black pepper ground
- 4 slices whole wheat bread toasted
- 1/3 medium cucumber sliced
- 1 cup spinach
Heat 2 tablespoons of oil in a medium pan, then add the onion, garlic and salt. Caramelize them, then add the lentils and ground black pepper.
Stir the mixture on low heat for 2 minutes or less. When you're done, add the mustard at the end.
Toast the bread slices, then place the veggies and the lentil mixture on them.
