How to Make a Vegan Waldorf Salad

Step 1: 

Lay the little gem lettuce leaves on a large serving plate or divide them into 4 small bowls to create a bed.

Step 2: 

In a separate medium bowl, whisk the vegan mayonnaise, yogurt, lemon juice, maple syrup, and salt together. Set aside.

Step 3: 

Add the celery, apple, red grapes, and walnuts to the bowl with the dressing. Mix well to combine, then scoop the salad into the lettuce leaves.

Step 4:

  • 3 tbsp vegan mayonnaise (40 g)
  • 1 tbsp soy yogurt (plain)
  • 1 tbsp lemon juice
  • 1 tsp maple syrup
  • ½ tsp salt
  • 1 head little gem lettuce (washed and separated)
  • 1 cup finely sliced celery (about 3 stalks)
  • 2 medium apples (peeled and cubed)
  • 1 cup red grapes (halved)
  • ½ cup chopped walnuts

Instructions
