This Vegan Protein Bread with Cherries and Walnuts is the perfect gluten-free and healthy Summer breakfast. It’s made with oat flour and soy yogurt. The fresh cherries give a slight tartness while the walnuts provide some crunchy goodness and more healthy protein.
I remember vividly the time when I was little and we climbed the huge cherry tree in my grandma’s backyard with the purpose of harvesting the tasty red fruits.
Of course, we always ate more, than we collected, but what can you do? It was the definition of freedom. Resting in the shade of the giant tree, trying to escape the scorching Sun while nomming on cherries.
Those Summers were truly blessed.
This bread reminds me of those peaceful Summers spent in the countryside.
I originally created a soy yogurt cake last year, but I really wanted to give it some more twists with this recipe.
For this bread, you’ll need:
- oat flour
- soy yogurt
- fresh cherries
- walnuts
So much goodness, am I right?
Here’s how to make this recipe:
First, preheat your oven to 350 degrees F (180 degrees C).
Lightly grease a 9×5 inch loaf pan. In a large bowl, combine oat flour, baking soda and salt. In a separate bowl, combine the soy yogurt, maple syrup, oil and vanilla extract.
Stir the yogurt mixture into the oat flour mixture and stir again.
Fold in the chopped walnuts and halved cherries until well blended. Pour the batter into the loaf pan.
Bake in preheated oven for 50 to 55 minutes (fan-forced mode), or until a toothpick inserted into center of the loaf comes out clean.
Let the bread cool in the pan for 1 hour, then enjoy with some cherry/strawberry jam.
It’s quite a simple recipe, but with wonderful ingredients that you can even swap out if you want to! Try strawberries, blueberries, almonds or cashews!
