Ingredients for this Easy Italian Salad Recipe

Vegan Italian Salad
  • Little gem or Romaine lettuce
  • Tomatoes
  • Kalamata/green and black olives
  • Fresh basil leaves
  • Olive oil
  • Lemon juice
  • Red wine vinegar
  • Balsamic vinegar
  • Dried basil
  • Salt and ground black pepper

How to Make an easy Vegan Italian Salad

Vegan Italian Salad

Step 1: 

Wash the lettuce leaves and if you can, use a salad spinner to get the excess water off. (You can also use paper towels, just make sure that your leaves are completely dry.)

Step 2: 

Chop the lettuce and combine with the other vegetables and fresh basil in a large serving bowl.

Step 3: 

Whisk the dressing ingredients together in a small bowl until smooth or add them to a sealed jar and shake until emulsified.

Step 4:

Pour the dressing over the salad and gently toss to coat. Serve immediately.

Ingredients

  • 4 heads little gem lettuce (OR 1 large head romaine lettuce) (finely chopped)
  • 12 cherry tomatoes (quartered)
  • cups olives (kalamata/green and black) (whole or halved)
  • 1 cup fresh basil leaves (finely chopped)

Dressing

  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tbsp red wine vinegar
  • 1 tbsp balsamic vinegar
  • 1 tsp dried basil
  • tsp salt (or to taste)
  • tsp ground black pepper

Instructions
