Non-vegan ingredients like certain meats and dairy will not cook well in a slow cooker, but this is not a concern when cooking vegan.
For many recipes, yes, you can just throw everything into a slow cooker! This works especially well for soups and stews. Some recipes will require a bit of staggering for best results, such as pre-cooking certain ingredients like onions, or adding fresh herbs at the last minute, but this is not always necessary.
You can add any vegetable to a slow cooker, but it’s all about timing. Delicate or soft vegetables like peas, zucchini, asparagus, and leafy greens will get very mushy in a slow cooker. You can use them if you’d like, but be sure to add them near the end of the cooking time so they retain their shape and texture.
Yes, you can absolutely put frozen veggies in a slow cooker, and it’s a great way to save time and money when cooking. However, the same rules apply as with fresh vegetables. Avoid using very delicate or soft frozen vegetables when using a slow cooker.
