Usually if I can, I eat raw fruits for breakfast (and lots of it). But sometimes I get bored of it. That’s when I make pancakes. I remember when I first found a vegan pancake recipe online that didn’t require flour. It was so exciting for me. The problem is, I have a weird relationship with flour. I hate it and I love it. I hate when a recipe calls for flour and I don’t really like eating bread. Now, don’t get me wrong. Bread is fantastic. For your mood. But not for your blood sugar and figure…oh. There is another problem. My food universe revolves around PASTA. I don’t think you understand how deep is my relationship with it is. Once I ate pasta for breakfast…. oh yeah. Totally, hardcore. But anyways, I really prefer flour-less recipes. They are much healthier and don’t have make your stomach heavy.

In this pancake, the banana gives the sweetness and the softness of it all. If you don’t like banana, I recommend you look for another recipe, because you can definitely taste it. The blueberries give such a nice tartness and also a lot of antioxidants. 🙂 The baking soda is sort of a must if you want your pancakes to be fluffy, but you can leave it out no problem. My second favorite part is, that you don’t have to use oil. If you use a non-stick pan, that problem is sorted. 🙂

 

Clean Eating Oat Banana Blueberry Pancake Vegan Healthy Gluten free

 

Oat Banana Blueberry Pancake (Vegan, Gluten-free, Healthy, Clean eating)

 

Prep time: 5 minutes

Cooking time: 15 minutes

Serves: 1

Ingredients:

  • 1 cup oats (I used a gluten-free version)
  • 1 overripe banana
  • 1/2 cup fresh blueberries
  • 1/2 tsp baking soda
  • 1 cup water
  • Optional: maple/agave/date syrup

Method:

  1. Put the oats, banana, water and baking soda into a blender.
  2. Blend until smooth.
  3. Wait 3-4 minutes for the batter to “harden” a bit.
  4. Pour a little amount into a frying pan, place 3-4 blueberries on it and let cook for 45 seconds.
  5. Flip and repeat.
  6. Top with fresh blueberries and an optional sweetener.
  7. Enjoy!
