Even though this recipe calls for cooking the corn, you can use a grill too for that nice, smoky flavor.

 

Ingredients for Vegan Mexican Elotes (Street Corn)

  • 4 corns on the cob, husk removed
  • ½ cup vegan cotija cheese: if you don’t have the time to make vegan cotija cheese from scratch, I recommend using store-bought vegan feta or vegan ricotta cheese.
  • 1/3 cup vegan Mexican crema
  • 1/3 cup vegan mayonnaise
  • 1 lime, juiced
  • 2 tbsp cilantro, chopped
  • 1 tsp tajin seasoning or chili powder (or cayenne pepper)

 

How to make Vegan Mexican Elotes (Street Corn)

 

Step 1: Bring a pot with water to boil. Boil the corn for about 5 minutes, or until tender.

Step 2: In a bowl, add the vegan Mexican crema, vegan mayo, and lime juice. Mix until well combined. Set aside.

Step 3: Chop the cilantro, set aside.

Step 4: When the corn is cooked, remove from the pot, let slightly cook off.
