One of the reasons why Christmas is my favorite holiday, because I can eat a ton of mayonnaise based salad and not feel bad about it. Of course we’re not even close to Christmas as I’m publishing this recipe, but that won’t stop me from enjoying this crazy delicious salad.

And it is crazy delicious. Especially with fresh bread.

YOu don’t need any kind of cooking skills or xperience this make this recipe. Only corn, scallion, vegan mayo, vegan mayonnaise, mustard and white or black pepper (optional).

You just have to mix everything together and you are done. Perfect to take to dinner parties or pot lucks with you. It’s almost as versatile as potatoes, but even easier to make.

Ingredients
  • 1 can corn
  • 1-2 stem scallions finely sliced
  • 5 tbsp mayonnaise vegan
  • 2 tbsp sour cream or yogurt (unsweetened) vegan
  • 2 tsp mustard
  • 1/3 tsp white pepper ground
Instructions
  1. Mix all ingredients (except the corn and scallion) in a small bowl.

  2. Add the corn and scallion. Mix well.

  3. Put the salad in the fridge for 1-2 hours or overnight.

  4. Serve with fresh bread slices. Enjoy!
