Vegan Strawberry Milkshake
Nowadays, it has been extremely hot around where I live. Like a 100F and more. We don’t have an AC unfortunately, so we’ve been stuck with a vent. God bless its heart, she’s really trying, but the scorching temperature wins most of the time.
Usually, we have several bottled waters stacked up in the fridge with watermelon, so that helps a ton. Recently, I bought ice cubes too. Today, I just didn’t feel like eating fruit and water for breakfast to cool off though. I guess I am burnt out. Oh, well. I couldn’t decide what to eat for a few hours. I just went back and forth from the fridge to my computer, silently suffering from the ever growing hunger and the heat. And then the bananas caught my eye.
Each time we go to Aldi (it’s my absolute favourite shop for vegan groceries) I always buy at least 3 packages of their Organic Bananas. I love it. It’s really hard to find organic produce around here, so I always jump on the opportunity. This happened when we went shopping last week.
The problem is that poor bananas have been browning away in the fridge without any love since then. Even my boyfriend who is an avid banana lover
(the only fruit next to raspberries that he likes tbh) didn’t go near them. I was having low key anxiety about having to throw out 15 fricking bananas soon, so I got to thinking on how to use them up.
I had just finished making a cheesecake so there were some defrosting strawberries on the counter, and then it clicked in my head. I want to drink strawberry milkshake RIGHT NOW.
It’s the perfect way to use up the overripe banana and to cool myself down. I quickly threw everything in the blender. I was really excited. I haven’t drank milkshake in YEARS.
After it was taste tested, I became obsessed with it instantly. It made enough amount for 2 person, but as you can imagine, I drank the whole thing in a sitting, cuz OMG.
It is soo creamy, and strawberry-y and sweet and satisfying and refreshing and cooling. It’s absolutely delicious.
The good thing is, that it’s made with plant milk, so it won’t go bad in the hot weather, and even if you don’t like strawberries, you can substitute it with any fruit. Strawberry is the best though. 😉
The Best Vegan Strawberry Milkshake Ever (gluten-free)
Prep time: 1 minute
Cooking time: 3 minutes
Serves: 2
Ingredients:
- 10 frozen strawberries
- 1 overripe banana
- 1 cup unsweetened vanilla soymilk*
- 3 tablespoon full fat coconut milk**
- 1 tablespoon avage syrup***
- 1 tablespoon lime juice
+a few ice cubes
Method:
- Put all ingredients into a blender.
- Blend until smooth (1 minute).
- Put in ice cubes.
- Enjoy! 🙂
Notes:
* You can use any vanilla flavored plant milk of your choice. My favorite is soymilk.
** It gives the shake creaminess.
*** Maple/Date/Rice syrup will do just as fine.
