Apple Cinnamon Granola will be your favorite cozy vegan breakfast staple! The crunchy oats, tart apple and warming spices will provide comfort even on the coldest mornings.

Apple Cinnamon Granola Ingredients
- rolled oats
- apple
- pecans
- ground cinnamon
- ground nutmeg
- neutral flavored oil
- maple syrup
- vanilla extract
How to make vegan Apple Cinnamon Granola
STEP 1:
Preheat your oven to 325 °F / 160 °C and line a baking sheet with parchment paper.
STEP 2:
In a medium bowl, combine the chopped apple, oil, maple syrup, vanilla extract, cinnamon and nutmeg. Stir well.
STEP 3:
Add the oats to the bowl and stir again until everything is well coated.
STEP 4:
Transfer the oat mix to the baking sheet and spread evenly. (For clumpy granola: use a spatula to press the oats into the pan. Repeat this step after taking the granola out of the oven.)
STEP 5:
Bake for about 10 minutes; remove from oven, stir, add the pecans, then bake for another 10 minutes, while checking on the pecans every 2 minutes (they burn easily).
STEP 6:
The granola won’t be dry right out of the oven, but it will dry as it cools, so give it time before eating.
STEP 7:
After it’s done drying, break up the granola with your hands and transfer to an airtight container.

- 2 tbsp maple syrup
