Apple Cinnamon Granola will be your favorite cozy vegan breakfast staple! The crunchy oats, tart apple and warming spices will provide comfort even on the coldest mornings.

Ingredients

- rolled oats

How to make
Step 1:
Preheat your oven to 325 °F / 160 °C and line a baking sheet with parchment paper.
STEP 2:
In a medium bowl, combine the rolled oats, ground cinnamon, ground nutmeg and salt. Stir well.

Step 3: Add the maple syrup, vanilla extract and oil to the bowl and stir again until everything is well coated.
Step 4: Lastly, add the diced apples and give it a good, final stir.

Step 5: Transfer the oat mix to the baking sheet and spread evenly. (For clumpy granola: use a spatula to press the oats into the pan. Repeat this step after taking the granola out of the oven.)

Step 6: Bake for about 15 minutes; remove from oven, stir, add the pecan halves, then bake for another 15 minutes, while checking on the pecans every few minutes (they burn easily).

(The granola won’t be dry right out of the oven, but it will dry as it cools, so don’t worry that it’s not crunchy right away.)

Step 7: After the granola has cooled down completely, transfer to an airtight container. (If you made clumpy granola: break it apart with your hands and then transfer it to a container.)
