I can’t believe it. Summer has literally sprinted us by and it’s that time of the year again. „Nightmare” for kids and parents alike. Start of the summer year. Okay, maybe it’s NOT that dramatic, but let’s admit, the 1st of September ain’t Christmas. 🙂
Now, there are a lot of positives to the coming of the Fall of course. The end of boredom, scorching hot suffocating weather and new beginnings. Every new school year is a fresh start.
One of the most difficult things about going to school is food. Meal prepping can be a stressing, tedious and time consuming daily task. If you want to prepare healthy food for yourself or your child, it’s an even bigger one. And let’s admit. We should ALL strive for healthy meals, especially when it comes to underage children who are still growing and developing their bodies.
This attitude was my main goal when I put together this article.
Healthy vegan back to school breakfasts and lunches that doesn’t compromise with deliciousness. All these meals are a perfect choice. They will fill you with energy and nutritions.
Healthy Vegan Back To School Breakfasts
If your mornings are anything like mine, they look a little like this: I oversleep, get dressed in literally 25 seconds, don’t have time to put on make up, so I tell myself „I’m pretty naturally” (nevermind the gigantic dark circles and catastrophic hair), don’t have time for breakfast so just drink orange juice from the can…and so on. Mornings are chaotic around here, but that’s fine.
There is one thing though that I always pay attention too: that we eat good healthy food. You should always have time for health. Luckily these breakfast ideas are absolutely great, and if you want to, you can make them ahead of the crazy mornings.

Oh, cinnamon. How healthy and delicious you are. These waffles might be the reason you have the motivation to get up at 6
at night in the morning. They are fluffy and bring happiness.
- BLENDER SWEET POTATO WAFFLES WITH BLUEBERRY SAUCE (GLUTEN-FREE)
Can you imagine a food hack better than this? Sweet potatoes once again have proved to be absolutely awesome. You can shovel these waffles into your belly without any guilt.
- Healthy Cookie Dough Milkshake (Vegan, Paleo, Gluten Free, Refined Sugar Free)
Give this milkshake to your child, you will be their favourite parent for sure. Super healthy and super yummy. Liquid cookie dough is going to be the next big thing, for sure.
- Berry Watermelon Fruit Salad
An oldie but goodie. It’s scientifically proven (probably), that if you cube up fruits and veggies, kids and husbands will more likely eat it. Well, at least that has totally been my experience.
- GLUTEN FREE BLUEBERRY BREAKFAST OAT BARS
I make these in a huge batch. You just pop them in your bag and you are ready to go, with a nutrition packed breakfast that can function as afternoon snack as well.
- HEALTHY FLOURLESS CINNAMON BUN BREAKFAST DOUGHNUTS
Okay, another cinnamon recipes, but only because there can never be enough of cinnamon treats. Especially, when it comes to breakfast donuts.
- STRAWBERRY BANANA SMOOTHIE
Smoothies are really the best way to sneak any fruits or veggies into a yummy drink. You can completely customize them to your likings. The strawberry-banana duo is an unbeatable variation though.
- Vegan Strawberry Cream Cheese
The cream of the heavens is what I like to call this. So creamy, light and delicious. You can put it on anything. It’s guaranteed to make any pastry better.
- BLUEBERRY BANANA POWER MUFFINS
If there is anything you need in sleepy, rainy, fall mornings is power. To be more precise, power muffins. To be even more precise, delicious blueberry banana power muffins.
- Flourless Banana Blender Muffins
Have I mentioned how I hate flour in sweet meals? Yep, I really do. So, flourless recipes have a special place in my heart. This recipe is really easy too, so I highly recommend it.
- FRUIT SPRING ROLLS (GLUTEN-FREE)
I love this recipe, beceause it’s so colorful and so much fun. You can put any fruit in it, it’s guaranteed to become a favourite.
- Sea Salt + Dark Chocolate Quinoa Energy Balls
Alright. Easy and healthy breakfasts can be decadent and fancy. Don’t let anyone tell you otherwise. These salted dark chocolate energy balls are top notch.

This sandwich will you up like a full meal. It has chickpeas in it, so your protein needs are sorted.
- Roasted Chickpea Gyros
Maybe you haven’t heard of gyros (an eastern-Europe dish) yet, but that’s about to change. Trust me, the kids will love it.

So simple and yet so easy to make. The avocado’s full of healthy fat so it makes a really satisfying meal.

Black beans are really a staple of the vegan American kitchen, and it’s foor a good reason. So healthy, and again you won’t have a problem with the lack of protein.
- Tofu Salad Sandwich – Vegan Egg Salad
I find myself missing egg salad a lot. Fortunately, this little recipe exists, and takes care of these cravings. The best thing is, you don’t even have to worry about the eggs going bad. Isn’t vegan food the best?
- Onigirazu (sushi sandwich)
I have never been a big sushi person myself. Even when I wasn’t yet vegan, the idea of raw fish was offputting. These little babies though are really yummy. They will make you and fish hapy too.:)
- Grilled zucchini hummus wrap
This wrap is a burst of flavors. If you are bored of regular sandwiches, choose this one. It won’t disappoint for sure.

- PISTACHIO CHOCOLATE BANANA SUSHI
My opinion is, that you can get anyone eat fruit, if you dip it in chocolate. Especially, if it’s as unique, as banana sushi is.
- FRUIT SPARKLERS
How cute these healthy snacks are? You can make the fruits into any shape you like. They will be a huge hit.
- Vegan Oil Free Roasted Pizza Chickpeas
There is one problem, with healthy snacks like these: they are so good, you can’t stop eating them. Anytime you have a pizza craving, choose these for a healthy low-carb option.
- Healthy Baked Carrot Chips
Carrots are not necessary something you can sell kids (or even adults) as a „treat”, but that’s only because they are not „dressed up” as such. Well, not until now.
- CINNAMON APPLE CHIPS
Tastes like apple pie, but healthy? Yes, please!
- APPLE COOKIES
My favourite, for last. There is no stopping with these. You can eat 3 big apples, before realising you are absolutely full.
