These adorable vegan granola cups are healthy and super easy to make. Whether you make these for breakfast, brunch or a sweet snack, I bet you’ll love it.

Vegan Granola Cups with yogurt and fresh berries

Ingredients

  • rolled oats
  • banana
  • yogurt of your choice: you can basically choose whatever flavored yogurt you fancy! I personally like sweetened coconot yogurt.
  • maple syrup: or agave syrup or rice syrup. or whatever liquid sweetener you prefer.
  • Strawberries and blueberries: or whatever fruit you like, but make sure to chop them up into tiny little pieces.

How to Make

Step 1: In a medium bowl, mash the banana.

Step 1: Add the oats, and maple syrup to the mashed banana and mix until well combined.

Step 1: Add the mixture to a muffin pan and divide over 6 cups. Push the mixture to the edges and bottom, so that you are creating a cup.

Step 1: Freeze the muffin tray for 30 minutes.

Step 1: Preheat the oven to 350 degrees and bake the cups for 30 minutes. Then remove from the oven and let cool off for 10 minutes.

Step 1: Add the yogurt and berries to each cup and serve immediately.

  • 1 ½ cup rolled oats
  • 1 medium ripe banana
  • 1 cup vegan yogurt
  • ¼ cup maple syrup
  • strawberries (for serving)
  • blueberries (for serving)

  • In a medium bowl, mash the banana.
  • Add the oats, and honey to themashed banana and mix until well combined.
  • Add the mixture to a muffin pan and divide over 6 cups. Push the mixture to the edges and bottom, so that you are creating a cup.
  • Freeze the muffin tray for 30 minutes.
  • Preheat the oven to 350℉ and bake the cups for 30 minutes. Then remove from the oven and let cool off for 10 minutes.
