Vegan Blueberry Oatmeal Muffins

Ingredients

  • ripe banana
  • maple syrup
  • peanut butter
  • water
  • oat flour
  • ground flaxseeds
  • baking powder
  • baking soda
  • salt
  • fresh blueberries

How to make

STEP 1:
Preheat your oven to 350 °F / 175 °C. Line a muffin tin with liners.

STEP 2:
Mix banana, maple syrup, and peanut butter in a medium-sized mixing bowl until combined. Mix in water.

STEP 3:
Add oat flour, ground flax seed, baking powder, baking soda, and salt and mix. The batter should be thicker than regular muffin batter, but not dough like. Add more oat milk if needed.

STEP 4:
Fold in blueberries, then scoop batter into prepared muffin tin.

STEP 5:
Bake for 25-30 minutes or until a toothpick comes out clean.

  • cup water
  • 2 cups oat flour (240 g)
  • 2 tbsp ground flaxseeds
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ¼ tsp salt
  • 1 cup fresh blueberries (148 g)
