Ingredients

couscous

sun dried tomato pesto

cherry tomatoes
halved

cucumber
sliced

artichoke hearts
quartered

kalamata olives

lemon juice
fresh

olive oil

ground

basil leaves

Instructions
Add 1 1/2 times boiling hot water to the couscous, cover and let it soak up the water for 20 minutes.
Chop the veggies, add the olive oil, salt, pepper and spices, then combine well.
Place all ingredients on a plate/in a bowl.
Squirt lemon juice on top, sprinkle some basil and enjoy!
