Easy Tomato Soup (vegan, dairy-free)

Tomatoes are technically a fruit, so it’s weird to say that this vegan tomato soup is one of my favorite veggie soups ever, but that’s what I’m going with.

 

Easy Tomato Soup (vegan, dairy-free)

As you might have noticed, I’m not really a big fan of complicated recipes that take hours to make. I think that creating truly delicious meals is a result of carefully selecting quality ingredients, and choosing the right herbs/spices to go with them.

This soup proves that sentiment perfectly. What’s in it? Pureed tomatoes, onions, water and spices. I mean that doesn’t sound very appetizing, does it? And yet, when you combine these and cook them for a few minutes, the result is a mouthwatering and heart warming yumminess.

This soup is creamy, clean-eating and perfect for weight loss. If you want the full experience though, I highly recommend serving it with a few slices of fresh bread or toast. You can even make vegan cheese toast as well as shredding a little cheese on the soup.

Talk about healthy comfort food. (All that tomato really outweighs the bread and vegan cheese.)

If you have fresh basil on hand, feel free to use that instead of the dried version. Also, just make sure you taste the soup while it’s cooking and add salt/pepper if needed.

P.S. If you really want a super creamy soup without any chunks, you can blend it, so the onion bits will dissapear. I know, little children (and picky adults) will like it more that way.

This vegan and dairy-free Tomato Basil Soup recipe is a creamy and super easy to make, hearty dinner. Perfect for weight loss and clean eating.

Ingredients
  • 1 tbsp olive oil
  • 1/2 head onion chopped
  • 1 small clove garlic
  • 25 oz pureed tomatoes
  • 10 oz water
  • 1 tsp basil dried
  • 1 tsp thyme dried
  • 1 tsp salt
  • 1 tsp pepper ground
Instructions
  1. Fry the chopped onions in 1 tbsp oil for a few minutes until they turn light brown.

  2. Add all the ingredients to a small soup pot. Stir and cover.

  3. Cook for 25-30 minutes. Taste while cooking and add salt/pepper if needed.

  4. Serve with a few slices of fresh bread or toast.
