Tofu Noodle Stir Fry Ingredients

  • dry soba noodles
  • oil (neutral, high temp.)
  • firm smoked tofu
  • yellow onion
  • shredded carrots
  • shredded cabbage
  • Stir Fry Sauce
  • soy sauce
  • vegan Worcester sauce
  • ketchup
  • rice vinegar
  • maple syrup
  • Garnish
  • scallions
  • sesame seeds

How to make Tofu Noodle Stir Fry

STEP 1:
Start with cooking the soba noodles in slightly salted water and prepare all the other ingredients in the meanwhile.

STEP 2:
When the soba noodles are done cooking, drain and rinse them in cold water to prevent sticking. Set aside.

STEP 3:
In a small bowl, combine the ingredients for the stir-fry sauce and set aside. Cut the tofu into small cubes.

STEP 4:
Heat 1 tbsp oil in a large non-stick pan or wok over medium-high heat and fry the tofu cubes on all sides (carefully turning them with a spatula), until crispy and golden brown. Remove the tofu from the pan and set aside.

STEP 5:
Heat the remaining ½ tbsp oil over medium heat and stir-fry the onions until soft.

STEP 6:
Add the carrots and cabbage and stir-fry until soft.

STEP 7:
Add the tofu with the sauce and continue to stir-fry for about 1-2 minutes.

STEP 8:
Reduce the heat to low and add the noodles. Toss until all the noodles are coated and stir-fry for 1 more minute.

STEP 9:
Top with sesame seeds and scallions.

Ingredients

  • 4 oz dry soba noodles (114 g)
  • 1 ½ tbsp oil (neutral, high temp.)
  • 7 oz firm smoked tofu (200 g)
  • 1 small yellow onion (finely sliced)
  • 1 cup shredded carrots (~2 medium/ 120 g)
  • 1 cup shredded cabbage (120 g)

Stir Fry Sauce

  • 6 tbsp soy sauce
  • 4 tbsp vegan Worcester sauce
  • 2 tbsp ketchup
  • 4 tsp rice vinegar
  • 2 tsp maple syrup

Garnish

  • 2 scallions (sliced)
  • 2 tsp sesame seeds
