An easy vegan Mexican Rice Salad recipe, that you can make in 20 minutes. Full of flavours and healthy ingredients!

So, what does a lazy vegan girl do on a hungry evening when she really doesn’t want to cook but still wants something healthy? Orders a salad-pizza. Well, she makes this super easy and cheap and totes yummy rice salad, of course! Yes.
This salad is something I was I knew, when I was in college. It would have totally saved me from starving and eating ramen like 3 times a day. Ughh.
But those days are gone, luckily and now I know how to make tasty, affordable meals. And guys, this rice salad is so tasty. I’ve been thinking for a long time about a “rice salad” I wanted to make. I’ve always loved pasta salad, so why not rice salad? That’s more nutritious too.
Rice salad is really not some genius invention. It’s been done before a thousand times. I just wanted to make something that has veggies and rice in it. So, yeah. Mexican flavors go really well with rice, I think. Especially, corn and beans.
Easy Mexican Rice Salad Recipe (vegan)

I’ll admit I left out the avocado, because I’m not that big fan of avocado, but you probably shouldn’t. If you want this salad to be really “Mexican”, you should use avocado.
I recommend using a Mexican spice blend for this recipe. You can of course put the spices in individually and see what ratio is the tastiest, but ya know. Simplicity and all.
I mixed the olive oil with the Mexican Spice Blend, the Cayenne chili powder and the salt in a tiny bowl and then I poured that “sauce”on the rice. Stir it a little bit, then put the veggies in. This way, the seasoning gets on all of the rice more evenly.
I put some parsley on top of my bowl, just because I like it more, than cilantro.

Easy Mexican Rice Salad Recipe (vegan)
Ingredients
- 1 cup rice uncooked
- 1 can beans
- 1 can corn
- 1 big bell pepper chopped
- 5 tbsp shallots chopped
- 2 tbsp oil
- 2 tsp Mexican spice blend
- 1 tsp Cayenne chili powder
- 2 tsp salt
Instructions
- Cook the rice.
- Mix in all of the ingredients and put in a big bowl.
- Garnish the salad with cilantro and/or an avocado.
- Enjoy!
