One of my favorite things about this vegan Bean Wrap recipe is that it’s ridiculously easy to make.
A few years ago when I first became vegan, I had tremendous trouble coming up with filling dinners that didn’t cost much. See, I was on an extreme budget and couldn’t really spend a lot on food.
I was also obsessed with protein…of course. It’s the curse of beginner vegans. Little did I know, that protein is not nearly as important as they say.
But anyways.
10-minute Bean Wrap (vegan)
I knew that I had to come up with quick, easy recipes otherwise I’ll starve to death (I ate pasta like 10 times a week). And one day I saw some tortilla wraps next to some canned beans and the big idea was born.
I always loved tomatoes, so I just threw a few in there. The funny thing is that I mostly eat this wrap without the greens, but let’s be honest.
I try to be a healthy vegan (fighting againts iron deficiency), so on principle I have to include some dark green leafy veggies. 😉
I found that I don’t need sauce as long as the tomatoes are juicy enough.
Also, you can use any kind of beans, but navy beans work a bit better with tomatoes (in my opinion).
If the pepper and salt is not enough for your taste (or too much) feel free to adjust it. (The lemon is also otional, but it gives a nice extra flavor to the wrap, so I like it.)
