Avocado White Bean Toast is my favorite savory vegan breakfast. You get a big dose of healthy fats from avocado, protein from white beans and fiber/vitamins from whaveter veggies you top it with.

Ingredients

Avocado White Bean Toast
  • whole wheat bread
  • radishes
  • ripe avocado
  • white beans
  • lemon juice
  • garlic powder
  • ground black pepper, salt
  • chili flakes

How to Make

STEP 1:
In a medium bowl, add the avocado, white beans, lemon juice, garlic powder, ground black pepper and salt and mash with the back of a fork. (You can also use a mini chopper to blend.)

Make sure to mix until well combined.


STEP 2:
Toast the bread slices and spread the white bean avocado mash on the toasts evenly.

Top with radish/tomato slices and red pepper flakes (optional).

Avocado White Bean Spread

  • ½ medium ripe avocado (68 g)
  • ½ cup white beans (canned or cooked)
  • 2 tsp lemon juice
  • pinch garlic powder
  • pinch ground black pepper
  • ¼ tsp salt (or to taste)
  • tsp red pepper flakes (optional)

Instructions
